This salad is so simple, yet so colorful and festive it’s a go-to whenever I host a gathering, and it is PACKED with nutrients and fiber. The balsamic reduction infuses it with a tangy and sweet flavor.

Balsamic Kale Salad

Ingredients

  • 1 bunch of kale
  • 1 red onion
  • 6-8 strawberries
  • 1 orange
  • 1/2 cup quality balsamic vinegar

Instructions

  • Steam a large bunch of kale for five minutes and arrange on a large plate.
  • Peel and slice a red onion and sauté in olive oil until browned.
  • Arrange onion in a circle around the kale.
  • Slice strawberries and oranges and arrange on top of the kale.

Dress with balsamic reduction:

  • Cook 1/2 a cup of good quality balsamic vinegar until it reduces by half.
  • Drizzle on salad.
